WITH SCALLOP STUFFING
2 cod loins (8-10 oz each)
2 stuffed scallops (defrosted)
2 tbs. of butter
salt & pepper to taste
1. Preheat oven to 375º
2. Butter bottom of baking dish.
3. Lay cod loins out evenly in dish, skinned side down. Season with salt and pepper
4. Spread stuffed scallop stuffing on top of the cod and bake at 375º for 25-30 minutes.
5. Broil at the end to crisp up the stuffing.
* Pairs well with roasted vegetables.
